Produced from a parcel just outside Chassagne-Montrachet proper and delivering much of the same concentrated mineral oomph, this is no simple Chardonnay; Jean-Marc vinifies and ages it just like the rest of his range, employing spontaneous fermentation and allowing it a full year on its fine lees in previously used 228-liter barrels before a six-month settling period and a bottling without fining and with just a gentle filtration.
