The Bellone, "beautiful grape", indigenous, resilient, but ultimately underrated, often used just for blending. However, we harvest it at full ripeness from an old vineyard from 1962 in Velletri, and then let it sit on the skins in stainless steel for three days, all beautifully macerated. This is where Bellone gets its redemption: pure, showcasing its boldness and character. Without beating around the bush, it bursts with intensity in the glass. The ripe harvest gives it body and alcoholic warmth. The maceration is brief but adds citrus and herbs to the nose.
