The wines from Gorges are among the firmest, most structured and mineral of all of the Muscadet crus, hence the 42 months on its lees at Pépière. Like for all of the other Pépière wines, the Gorges fruit was direct-pressed in whole clusters and the juice settled naturally for 12 hours. It was then fermented in stainless steel tanks with natural yeasts, followed by aging sur lie in vat for three and a half years before bottling without fining or filtering.
