100% Cartoixà Vermell (the pinkish-redish skinned Xarello), selected from organically grown parcels within 20ha of estate vineyards over calcarious clay soils with an average vine age of ~40 years. Hand harvested, direct pressing, and cold decantation for 36 hours. Spontaneous fermentation in a 55-liter demijohn. End of fermentation in the bottle, minimum aging of 24 months. Disgorged only upon order. Unfined, unfiltered, and zero SO2. Annual production is around 2,000 bottles.
