The Chardonnay comes from a 30-hectare estate located in Corbières between Carcassonne and Narbonne. The name of the château comes from the Canos chapel, the main property of the estate, founded in the 12th century and used by monks of Fontfroide Abbey. 20 hectares are in AOP Corbières and 10 hectares are in IGP Oc. It spreads over 3 towns: Luc sur Orbieu, Boutenac and Lézignan Corbières. Guyot pruning.
Harvest & Vinification:
Traditional vinification with cold racking of the must (5°C) for 24 hours. Fermentation takes place in stainless steel tanks at a low temperature between 15 and 17°C for 48 hours. Fermentation starts slowly in with natural yeasts.
