100% Cinsault from a 25+ year old vineyard in Florida (which geographically belongs to the Biobío region but from a winemaking standpoint is considered Itata due to the granite composition of the soil). Made just like "Cuchacucha," Gustavo's winemaking doesn't vary much from wine to wine, only shepherding them through their natural process. This really lets us see what the differences between different sites and varieties are. The grapes are hand harvested, destemmed and go through a 2 week fermentation before pressing and aging between stainless steel and used French oak. Bottled unfined, unfiltered, low sulfur addition at bottling. In this case, the wine has darker fruit and broader structure but still fresh with good acidity and minerality. Around 1,450 bottles produced.
