100% Airén grown organically and hand harvested in central Spain. The wine goes through spontaneous yeast fermentation in stainless steel and finishes in the bottle (made using the Ancestral Method) several months after harvest. No fining, filtering, or SO2 used at all. The petnats tend to age in the bottle up to a year at times before release and are disgorged to order. Playful bubbles and a slightly herbaceous nose.
