C. Cassis is an aperitif made with local blackcurrants and vibrant botanicals. Inspired by ratafia de cassis made by European farmers for centuries to bring people together. Enjoy with friends neat, chilled, or mixed.

Details: The currants are macerated for one to two weeks in stainless steel, then fortified with a neutral grain spirit. After pressing (bladder press), the liquid is returned to the tank and infused with botanicals for several weeks. Once the botanicals are racked, the aperitif spends a few more weeks in tank to settle before bottling. Everything, including labeling, is done by hand.
Currants: We primarily source our currants from Greg Quinn at Walnut Grove Farms, just 20 minutes from our production site. While not certified organic, the farm follows organic practices.
Storage: C. Cassis Aperitif is best kept in the fridge after opening and will last up to a year. If left unrefrigerated, it changes slowly with air, but it’s best used within 2-3 months.
About: C. Cassis was founded in December 2020 by Rachael Petach, who is both the founder and producer. Made in small batches throughout the year, around 18,000 bottles of the flagship C. Cassis Aperitif are produced annually.
