Classified among the greatest wines of France, the Vin Jaune is exclusively made from the Savagnin grape variety. Planted on Jurassian blue clays, its aging in oak barrels is 6 years and 3 months, without compensating for the evaporation share of about one third of the volume. A veil of yeast is formed on the surface of the wine, and protects it from any oxidation. It is during this long aging that it acquires its spicy aromas of nuts, almonds or curry.
