Selected from five parcels of a 25ha certified organic vineyard on clay soils, this is all Tempranillo (18-50 year old vines) harvested by hand, 100% destemmed, with spontaneous fermentation and maceration in concrete tanks for around 10 days with indigenous yeasts followed by further aging in stainless steel with the fine lees around 5 months after harvest. Bottled unfined, unfiltered, and with low to no SO2 at bottling (less than 25ppm). Annual production is around 42,000 bottles.
