100% Criolla Chica from some of their highest vineyards in the IG Los Chacayes (Valle de Uco, Mendoza) at 1000-1100m. Hand harvested, 50% whole cluster fermentation with indigenous yeasts in small clay amphora. Gentle and slow work for minimal extraction. Aged in the same small clay amphora for about 8 months. Bottled unfined, unfiltered, and zero SO2.
