Compared to Rocche di Castiglione, the soil here is much richer in heavy clay, resulting in lush fruit, intense color, solid structure and pronounced tannins, all of which contribute to longevity. 29 days contact with the skins in stainless-steel tanks. The unique tanks trap the CO2 naturally produced in fermentation and then released periodically in targeted jets in order to break the cap of skins formed on the top of the must. This process is both extremely gentle and eliminates the need to for external power resources. The wine undergoes malolactic fermentation in steel and is then aged for 25 months in 25 HL French oak barrels.
