A rare sparkling cider from the South of Spain - Sidra del Sur in Granada at over 2,000m in elevation. All from estate apples or locally foraged wild indigenous varieties, mostly Prunus Malus (not purchased fruit from elsewhere like many other producers do). Trees are 10-40 years of age, grown organically over slate soils with shallow stones. Hand harvested with a mule, spontaneous yeast fermentation in stainless steel for 10-20 days.
This Sidra is a special cuveé - from 2000 vintage that was refermented with fresh must from the 2017 vintage. Bottled unfined, unfiltered, and zero SO2. Complex and unexpected, so different from the Sidras from the North - a definite must try!
