Viticulture: Grapes are hand harvested Vinification: 100% 2014; fermentation takes place in stainless steel using natural yeasts. 100% malolactic.
Aging: Aged in stainless steel. Bottled and allowed to age on the lees for a minimum of 3 years before disgorgement, then aged an additional 3 months. Dosage is 3.5 grams/liter (excatly half of the Brut NV)
