In past years this was released as “Super 8” when they were able to get enough rice down to just 8% of its original size. In 2015, after 350 hours of polishing, they surpassed themselves and made it to 7%. Amid youthful, slightly astringent flavors buds cutely the pure flavor of rice. This is a sake with the elegant aromas of muscat grapes and Claude Blanchet pears and the crisp, clean flavors of pineapple that spread beautifully across one's palate. A short, clean finish follows, displaying the clarity of the sake and the skill of the brewing technique.
