Biodynamic. This new bottling of Pinot Noir comes from two new-ish tiny estate parcels of Jacob in Augea, acquired in 2019, based on soils of marl and limestone dating from the Lower Jurassic period. The Pinot vines were planted in 2000. Jacob does this Pinot with whole-cluster maceration but no further extraction (i.e., no punch-downs or pumpovers). The wine is then aged in demi-muids (500L to 650L barrels) for eight months before release. No SO2, no additives, unfined and unfiltered.
