It’s only 12% alcohol with brisk acidity and notes of herbs, minerals, citrus, stone fruits. The grapes are macerated for six hours then fermented in temperature controlled stainless steel for ten days. The wine is aged on fine lees for an additional ten weeks before bottling, adding a depth of flavor and texture not usually found in a typical liter bottle!
