Passionate students at this Alsatian agricultural high school are taught about organic and biodynamic concepts in viticulture from a young age. They participate via apprenticeship in vineyard and cellar work throughout the year, while the Domaine de l’École team guides them.
Vineyard: Calcareous marl and south/south-east exposure. Organic vineyard.
Grapes: Auxerrois, Pinot Blanc
Making of: Grapes are hand-harvested and sorted in the vineyards. Direct pressed. Elevage in stainless steel vats for 7 months. Zero addition of sulfur, unfined and unfiltered.
Pulpe has tasting notes of melon, lemon pith, wet stone and honeysuckle. A DOPE refreshing white wine, that tastes like licking a wet rock hehe!
