100% Xarello from the Rovira vineyard in the Municipality of Santa Margarita i els Monjos. Hand harvested in early September and goes through meticulous selection. Macerated in its own skins for 6 days and juice is run free without pressing. Subsequently, it is aged in 500-liter oak barrels (not entirely topped up) for 6 months where a flor veil develops. Bottled unfined, unfiltered and zero SO2. Annual production is around 2,558 bottles.
