Organic, Biodynamic practices. 'Pear-Shaped' is 50% pears and 50% apples drawn from winemaker and farmer Jerôme Forget's nearly 200 year-old orchards in Torchamp, Normandy. Forget is a dairy farmer in addition to a winemaker; his cows graze beneath his trees and, he says, "contribute to the upkeep of the orchards. Animals and fruit production go hand in hand." Fruit is hand-picked from off the ground, not from the trees' branches, to ensure total ripeness; the fruit is sorted according to ripeness levels in the cellar to create correct assemblages. All fruit harvested is pressed the same day as picking, as the fruit is very delicate and Forget wants to preserve freshness and detail. Once pressed, the juice is pumped into steel tanks, where it ferments and rests for around three months. After racking and attentive monitoring - Forget tries to avoid filtering - the fermented juice is bottled with no additions. The wine's natural yeasts prompt fermentation; secondary fermentation takes place in the bottle. A minimal amount of SO2 is added depending on the cuvée (quantities are always indicated on the label). Three or four months of development follow, then the cider is released.
