The grapes are naturally drying on wooden frames for about three months. The must ferments with wild yeasts in simple open vats for several days in contact with oxygen. The ageing takes place in large, old Slavonian oak barrels for four years. The wine is naturally clarified with racking and oxygenations before being bottled with filtration. The vineyard's soil is naturally enriched with humus from green manure and the vines are protected with limited quantities of a copper and sulphur spray according to biodynamic principles.
