The bunches are hand-harvested and direct-pressed in whole clusters and fermented with native yeasts in cement tank. The wine spends 6-8 months on fine lees without any addition of sulfur. Bottled unfined and unfiltered, with a small 30mg/liter dose of sulfur. The name of the wine is a reference to Adèle Blanc-Sec, a French adventure cartoon heroine.
