Barthélemy is produced from a geologically unique plot called "Les Rocs", planted with 100% merlot. This wine is obtained from natural vinification by infusion. It is aged for at least two years in used barrels, by dynamisation according to lunar cycles and without the addition of sulphur dioxide or other compounds. The wine is then bottled without filtration. With a deep purple robe, its subtle nose develops a palette of aromas evoking a basket of well-ripened grapes. Its highly rich palate expresses the complexity of a deep yet silky structure. It has a very seductive and appealing finish which invites you to explore further. Barthélemy is a perfect companion to all grilled meats, game, mushrooms and fine delicacies. It is a wine which does not dominate the delicate flavours of accompanying dishes. Our food pairing suggestions for Barthélemy : . Leg of lamb . Monkfish with mushroom or Jerusalem artichoke sauce . Peking duck This vintage expresses the full authenticity of its terroir with the beautifully intense and luminous colours of blackcurrants. It has powerful aromas of red fruits. In the mouth it is like velvet, with rich, well-balanced tannins. It is exceptionally elegant. The aftertaste is persistent, with big, beautifully fresh notes. Yields : 48 hl/ha Average temperatures : 13,2°c Total rainfall : 812 mm Days of frost : 49 Alcoholic strength : 14,2° PH : 3,24 Sulphur dioxide : < 1 mg/l This is undoubtedly a wine to be kept. Thanks to its delicious, smooth tannins, however, it can be drunk and appreciated immediately after a little aeration.'
