60% Embolicaire, 40% blend of Cabernet Franc & Cabernet Sauvignon. All organically grown with biodynamic techniques on mostly of clay loam, and hand harvested. All whole clusters go into stainless steel with native yeasts. Short fermentation and aging in tank for a few months before bottling via the lunar calendar, unfined, unfiltered, and zero SO2. Medium-bodied, soft tannins, and lots of that leafy, herbal Cab Franc character here.
