The name "Salicornio" means "Glasswort" - a bushy plant that grows well in salty, brackish waters. Andres has chosen this name to reflect the saline characteristic of the grapes grown here in this plot from La Mata Natural Park, at sea level and less than 50m from the ocean. These vines were planted in 2011.
100% Malvasia, grown organically (with some biodynamic techniques) over sandy saline soils. Grapes area hand harvested, with soft maceration and gentle skin contact for 5 days followed by spontaneous fermentation in concrete vats with native yeasts. Half way through fermentation wine is pressed and skins removed. Aged on the lees for 6 months in concrete vats under a layer of flor. Bottled unfined, unfiltered, and zero SO2. Intense yellow in hue, full of citrus and stone fruit notes, full and complex with a pronounced saline character. Medium bodied and very food-friendly.
