From 25-40 year old vines planted on the seaside slopes of Getaria in the Basque region on the southern edge of the Bay of Biscay. Traditional vinification – harvested grapes are brought in and immediately chilled down to almost freezing temperatures. Vinification with native yeasts in stainless steel under a blanket of carbon dioxide gives the wine its signature spritz.
