This is a petnat sparkling wine made in collaboration with Salva Batlle, Jordi Inglés, & Marc Andreu. A blend of 28% Parellada, 17% Macabeo, 55% Xarello grown organically in the "La Serra de Montmell" vineyard in Tarragona over calcareous clay soils. Harvested by hand, cold maceration for 2 days, fermentation in a stainless-steel tank and bottled under crown cap without disgorging. Unfined, unfiltered, and zero SO2. Refreshing foamy bubbles, clean, almost faintly aromatic and soft mineral tones. Honestly, excellent!
