100% Airén from a 50+ year-old, head-trained, dry-farmed vineyard planted on clay loam soils at 700 meters altitude in Villarrobledo. Harvested by hand in early October, destemmed, macerated for several days on the skins with cool temperature in stainless steel tank until fermentation kicks off spontaneously. It is then pressed and transferred to 100-year-old clay amphora of 320L capacity to finish fermentation and age on the lees for 100 days, with batonnage several times per week. Bottled with no fining or filtration.
