It's not surprising that it was this sake that had us all going nuts. This category is on fire. The days of cheap barely drinkable hot sake swill at the hibachi joint are over, and the world of fine sake is here, and it is amazing. Add Japanese fruit to that, and it is GAME OVER.
Over the last two years, you may have ordered the Yuzu sake from Miyakobijn from us, a sake that you have showed an insatiable desire for once you tasted it. Well. enter Heiwa Shuzou sakes in 2025!
Founded in 1928, Heiwa Sake brewery is nestled in a picturesque valley in Wakayama surrounded by mountains and an abundance of precipitation, giving them an endless reservoir of beautiful spring water perfect for sake brewing. Their
exceptionally gentle and luxurious water, recognized as Koyasan Nansui, flows down from the Koyasan temple, a designated
UNESCO World Heritage site. Heiwa has been recognized in Japan and on the global stage for their quality Sake. They received one of the highest recognitions in 2019 and 2020, winning Brewer of the Year, a milestone unprecedented in the world of sake breweries.
It is the time of year when Heiwa releases their intensely popular line of "Tsuru-Ume" fruited sakes. If you loved the Yuzu sake from Miyakobijin, or enjoy the essence of the purest fresh fruits in liquid form, do not miss this lineup.
What sets these sake apart from their traditional line, is the addition of their own Nankoubai Plums, or "Ume" as a base fruit for their sake, these are essentially plum (ume) sakes, then each variation gets an addition of other local fruits like yuzu, peach, strawberry, lemon, and their "summer orange" sake which features 3 different locally grown types of oranges. Today, we have the rare opportunity to offer 7 different version of these Ume Sake.
The resulting sake are outrageously delicious. Their beguiling flavors brings wonderful complexity of aromas. It's the balance between a small touch of sugar and the ripping acidity that really got our attention though. They are tantalizing! These is like the best fresh juices and lemonades you've ever had. Just a pure, joyful delight, the absolute perfect drink for a sunny day.
How to drink them? At their lower abv of 7-10%, you can drink them straight or over ice. My favorite thing to do is to make a spritz, or include them as the star of a simple cocktail: they just scream for a quick stir with gin or vodka and a splash of seltzer or tonic for a little fizz! I also love to fill a wine glass with ice, pour in some inexpensive sparkling wine, and top if off with some sake for an Ume Spritzer!

TSURU-UME KANJUKU (NANKOBAI PLUMS)
Tsuru-ume KANJUKU is the entry level of the Tsuru-Ume series. Kanjuku means fully matured or ripe. Nankobai, their local
plum in Wakayama, is one of the most popular kinds of plum in Japan, which offers some sweetness with a tart character.
When you open this bottle, you quickly enjoy the fresh aroma of ripe plum.
TSURU-UME KANJUKU NIGORI (NANKOBAI PLUM & PEACH)
Tsuru-ume Kanjuku Nigori or ripe plum with cloudy peach uses peach paste from Heiwa’s local farm in Wakayama, mixing with
their Kanjuku plum sake. You will love the balance of sweetness from peaches and acidity from plums. It is like ’Nectar’ for grown ups
TSURU-UME SUPPAI (TRIPLE NANKOBAI PLUM)
SUPPAI means sour. Tsuru-ume SUPPAI is umeshu based on sake. Wakayana prefecture is the plum heartland of Japan. This brew has used three times more plums than what is used in a typical umeshu. The particular plum used here is called Nankobai. Its skin is soft and the fruit itself is thick and juicy; one of the best quality plums in Japan. A subdued sweetness is refreshing and its acidity is addicting!
TSURU-UME ICHIGO (PLUM & STRAWBERRY)
Tsuru-ume Ichigo or strawberry is a seasonal limited Tsuru-ume. Wakayama is also famous for strawberry production. The
contents here are strawberry juice (60%) and the rest is Tsuru-ume plum sake. The fresh Japanese strawberry aroma and
sweetness blending with tartness of plum sake is well balanced and leaves you wanting more!
TSURU-UME LEMON
It uses local lemons from Wakayama, squeezed with the skin left on. You will enjoy the harmony of acidity, gentle sweetness and zest flavor from the skin. Tart and refreshing!
TSURU-UME YUZU
Tsuru-Ume Yuzu is based on sake and the ratio of Yuzu juice to sake is close to 1:1, which is higher than most Yuzu sake in
the market. Heiwa’s Yuzu is all coming from local farms in Wakayama Prefecture, where Heiwa is located (Heiwa owns its own
Yuzu farms)! This juice is squeezed with the skin left on. You will enjoy its tartness, zest flavor with bitterness, good amount of acidity and a little sweetness.
TSURU-UME NATSU MIKAN (SUMMER ORANGE)
There are many kinds of oranges grown in Wakayama and Heiwa Shuzou uses Natsu Mikan, Amanatsu (both oranges are
harvested in summer) and lemon for this sake. Oranges are squeezed with the skin left on – you will enjoy the bitterness and the zest flavor in this rich orange sake. Refreshing on a hot day in the summer.
