The Newtown Pippin apples are sourced from Bear Valley Ranch, located in Aptos, CA. The orchard was planted in the 1940s and has been farmed by the same family for the last 3 generations. The orchard is dry farmed, with no input farming, where it is only pruned and picked each year. It is aged for 12 months sur lees and then it is refermented with Gamay pomace from the Topotero Vineyard. Fresh fermenting apple juice was used as a dosage to capture the natural carbonation in the bottle.
