A red wine made from 100% Pinot Noir from Jerez de la Frontera.
Manual harvest in several passes, micro-vinification in open deposits with one hundred percent whole bunches. Followed by a two-week post-fermentation maceration. Pressing extraction at 50%, 'elevage' in barrels of second-and third-year use of Taransaud & François Freres cooperages. The wine is only racked once and for bottling. Seeking therefore to maintain the carbon dioxide in solution and do not add sulphur during aging. No corrections and no filtering.
