100% Pinot Noir grown organically on the classic Albariza soils in Sanlúcar de Barrameda. Manual harvest in several passes, micro-vinifications in open tanks at different levels of whole bunch and post-fermentative maceration for two weeks. Aging in 2 and 3 year old barrels from Taransaud & François Fréres (fancy!). Alcohol: 11.5%, Ph: 3.6, SO2: 50, RS: <2 g/l.
