To this base wine, we add a seveningredient brandy-infused combination of organic herbs, spices, fruits, and a touch of honey. Many of the world’s great aromatized wines vermouth, quinquina, amaro, Americano — use dozens of ingredients to gain their layers of flavor, but they start with relatively neutral base wines. As we experimented with aromatizations of our very nonneutral base wine, we found that this raw material was so intense on its own that fewer added ingredients yielded a better wine.
