100% Trepat on calcareous clay soils, grown organically. Hand harvested, destemmed, maceration for 3 days on the skins, alcoholic fermentation in stainless steel tanks with native yeasts. Aged for 8 months in stainless steel tanks, plus 5 months in bottle. Bottled unfined, unfiltered, and zero/zero. Annual production is 2,000 Liters.
