A wine from the "Ismael Gozalo" trilogy (he makes a line under MicroBio and under his own name) Sin Nombre (no name) is organically grown Verdejo on slate, phyllite, loam soils.
As Ismael says - It is the result of a myriad of "sin:" No Acidity Correction, No Enzymes, No CO2 Correction until bottling, No Clarification, No Filtering, No Pumping-over of lees, No Battonage ...
Grapes are hand harvested. It is fermented with spontaneous yeast in older neutral French barrels and remains in it for at least 9/10 months with its fine lees. At the beginning of August the following year the wine is removed from the barrel to give it its second aging period, this time in stainless steel tanks. It remains for at least another 9/10 months in tank, thus passing its second winter of aging with the fine lees. By gravity alone the wine clarifies without the need to filtering.
