Marco Sara Passito is not a late harvest but rather a full-maturity harvest followed by 60 days of natural appassimento, meaning no temp control, no fans, no chemicals...just drying on wicker mats with open windows on both sides of the drying room as ventilation. It's aged in used barriques for 12 months. Around 100-110g/l residual sugar.
