Varietals : Chardonnay. Vinification : The wine is vinified in a combination of stainless steel, large barrels and barrique; sur lie in the winter. Zero dosage. Aging : The wine is left on its lees during the winter and aged in the cool cellars, hand disgorged 3-6 months before release. Fermentation : Wild yeast fermentation in old oak casks and temperature controlled vats followed by lees aging with bâtonnage over the winter. Secondary fermentation and further aging on the lees for over five years. Disgorged 6 months prior to release. No dosage. A wine full of tension and minerality.
