100% Pais from Portezuelo, more specifically from an area called Confluencia where the Itata and Ñuble rivers meet. This ancient farm going on granite soils was given to the Jesuits around 1600 with some Pais already planted so these vines are OLD. "El Carmen de Cuchacucha" is 150 hectares where about 30-40 hectares are under vine, all País, owned and farmed by an older woman with the help of 2 workers and a bunch of cows who graze and compost the vineyard. Vines are sustainably dry-farmed. The grapes are hand harvested, destemmed and go through a 2 week spontaneous yeast fermentation before pressing and aging between stainless steel and neutral French oak for around 8 months after harvest. Blended and bottled unfined, unfiltered, low sulfur addition at bottling. 1,350 bottles produced. Compared to some of the other Chilean Pais in our portfolio these tend to be a little less rustic and more elegant, while being undeniably old-soul.
