Grapes Variety : Chenin Blanc. Color/Style : White. Age of vines : 45 years old on average. Farming : Organic (certified). Fining/Filtration : Light filtration at bottling (non-sterile). Winemaking : Spontaneous fermentation with native yeast lasts four to six weeks. The wine is then racked into old tonneaux and stainless steel tanks for two to three months of aging on the fine lees. The wine is then lightly filtered and bottled for its secondary fermentation. The wine averages two years of aging sur lattes with a dosage of six grams. The wine often has a small, discernable amount of residual sugar.
