Ansonaca/Vermentino/Trebbiano/Malvasia. The Padovani sisters source this field-blended fruit from a grower friend on the Tuscan coast in Capalbio. The varieties are co-planted on sandy, iron-rich soils, are organically farmed and average around 60 years old. The bunches are harvested by hand. Part direct-press, part 8-day maceration. Fermentation is spontaneous and without sulfur in steel. The wine is blended aged for 5 months in oak and 14 months in steel and bottled without filtration.
