Sandri’s Dolcetto d’Alba, from a miniscule north-facing parcel on the property, is thoroughly of a
piece with his Nebbiolo-based wines: vibrant, pure-fruited, and devoid of excess flesh, possessing
a gentleness of spirit reflecting its low-impact origins even as it offers a touch of lip-smacking
structure. Just like its loftier brethren in the cellar, the Dolcetto ferments naturally in large
cement vats and ages in very old Slavonian-oak casks—as with the other varietally labeled wines,
for 12 months—before being bottled without fining or filtration, and with just a whisper of sulfur.
