The fog pattern moderated nighttime temperatures allowing grapes to maintain firm acid. Hand-harvested grapes were gently pressed with fermentation initiated in a chilled tank. As the juice approached dryness, it was moved into barrel to sur lees age. Barrel stirring was done for the development of greater aroma and texture.
