After repeated sampling showed the grapes were ready, we picked in late October. Through careful fermentation, harsh tannins were avoided by tasting and deciding pump-overs for extraction. These cabernet sauvignon grapes transformed into a truly sensuous wine. Its richness and complexity was further enhanced with the use of new american oak bourbon-style barrels. Showing dark berry fruit and coated tannins, this wine has a long, smooth finish.
