Whole cluster carbonic maceration for 9 days. Gently pressed. Spontaneous fermentation from native yeast in stainless steel tank. Aged on fine lees in chestnut barrel for 4 months. Unfined, unfiltered, and zero SO2. Annual production is 1,100 bottles.
