Description

Ideally, the devatting is made when the "mortification" of the grapes is attained: this is when the colour of the berry's skin passes inside to the pulp. It is thus possible to obtain wines avoiding an excessive extraction and characterized by an elegant colour and by discreet and smooth tannins. After pressing, our Saint-Amour finishes its alcoholic and malolactic fermentations in fairly old 400-liter and 228-liter barrels and is bottled at the beginning of summer without any fining or filtration.
