A younger subspecies of Agave angustifolia from the Partida family, mature at 7 years – but still with 3 further years capón in the field before harvest. Distilled in 2017 and rested for nearly 3 years before bottling, this batch is light and herbaceous, with pronounced mint, cilantro and ginger on the nose and unctuous texture & minerality on the palate. Like a salted pecorino romano grated over a Vietnamese salad. Remarkably easy to drink.
