100% Cabernet Franc (from 4ha of vines that used to be sold off, as they used to not want to work with "international varieties" but eventually decided to work with it, making 500 bottles from their first harvest, with terrific feedback). Everything that Andres and his wife Marta do is organic, using biodynamic techniques as well as even energy work when applicable. As an experiment of sorts, this goes through a lot of winemaking play - some whole bunch, some time in amphora, stainless steel, oak and even glass demijohns. The wine is unfined, unfiltered, and never with use of SO2. The result is lovely - young, red-fruit vividness with more mature notes of cassis and blackcurrant. As such, it works well as an aperitif wine but can also stand up to red meats and hard cheeses.
