Organically farmed blend of Syrah, Garnacha, and Monastrell on clay calcarious soils with manual harvesting, total de-stemming, and 6-day maceration with the skins. Fermentation with indigenous yeasts in stainless steel tanks and aged for around 5 months in tank. Absolutely no fining, filtering, or sulfur of any kind. Natural, fruity, juicy, with super persistent foamy bubbles.
