100% Pinot Noir, grown organically over poor and stony slate soils at high elevation (1,300m) in the Sierra Nevada Mountains in Alpujarras, Granada (Andalucía). Grapes are hand harvested, destemmed, followed by direct pressing and 1/3 aging in barrels and 2/3 in stainless steel for approx. 9 months. Bottled in June 2021. Production: 1,000 bots. Unfined, unfiltered, and zero SO2.
"Salmonidos" is a play on words that come from the concept of an actual Salmon swimming upstream, against the current, much like the Valenzuelas for making wine "against the currents" of the region as well. Allegedly what a local inspector called them, and with the color of the Rosé, Salmonido made a great name for this special cuvée.
