100% Mencía, vines are around 30 years old at an elevation of 280-320m on very shallow sandy granite soils. Double selection of clusters, spontaneous fermentation in 40% small stainless steel tanks and in open 60% in 1000 liter vats with 45% whole clusters. Maceration for 3 weeks with gentle daily manual pumping over. Spontaneous malolactic and aging in French oak barrels and stainless steel tanks. Production is 6,480 bottles.
